Preheat oven to 350°
Thorough wash the mushrooms, remove stems, and set caps aside. Be sure to keep stems to use in mixture
Chop mushroom stems, red pepper, celery, and onion. Thoroughly combine
Heat olive oil over medium-heat in pan. Cook veggies until soft. Remove from heat and let cool slightly
Chop shrimp or crab meat and combine with sautéed veggies. Add bread crumbs, and basil. Mix well
Place mushroom caps in a baking pan and fill each on with a heaping spoon of mixture. Top with parmesan and drizzle with a bit more olive oil
Bake 30-45 minutes until tender and slightly golden
Spring with lemon juice. Serve immediately
