Stuffed Mushrooms

Stuffed Mushrooms

Ingredients

  • 20-25 mushrooms, stems removed and set aside
  • 1 red bell pepper, finely diced
  • 1 white onion, finely diced
  • 1 stalk celery, diced
  • 1/4 lb. shrimp or crab meat, chopped
  • 1/2 cup basil, finely chopped
  • 1/2 cup Italian bread crumbs
  • 1/2 cup parmesan cheese
  • 1 Tbs. lemon juice
  • 1 Tbs. olive oil

Instructions

  • Preheat oven to 350°
  • Thorough wash the mushrooms, remove stems, and set caps aside. Be sure to keep stems to use in mixture
  • Chop mushroom stems, red pepper, celery, and onion. Thoroughly combine
  • Heat olive oil over medium-heat in pan. Cook veggies until soft. Remove from heat and let cool slightly
  • Chop shrimp or crab meat and combine with sautéed veggies. Add bread crumbs, and basil. Mix well
  • Place mushroom caps in a baking pan and fill each on with a heaping spoon of mixture. Top with parmesan and drizzle with a bit more olive oil
  • Bake 30-45 minutes until tender and slightly golden
  • Spring with lemon juice. Serve immediately
  • Enjoy!
