Apricot & Almond Baked Brie

Apricot & Almond Baked Brie

Ingredients

  • 1/4 cup dried apricots, finely diced
  • 1/4 cup almonds, chopped
  • 1 Tbs parsley, chopped
  • 2 Tbs apricot preserves
  • 1 tsp Dijon mustard
  • 1 package refrigerated crescent rolls
  • 1 4-inch brie round, including the rind
  • 1 egg, lightly beaten

Instructions

  • Preheat oven to 350°
  • Combine apricots, almonds, parsley, preserves, and mustard. Mix Well
  • Unroll crescent roll onto lightly floured surface. Separate crosswise into 2 squares
  • On an oven safe sheet, place brie on one square, leaving one-inch border around the brie
  • Scoop apricot mixture on top of brie
  • Place other square of dough over the brie and apricot mix
  • Pinch the edges together. Brush with egg
  • Bake 30-35 minutes or until golden brown and bubbly
  • Let sit 15 minutes before serving. Serve with crackers or French bread
