Preheat oven to 350°
Combine apricots, almonds, parsley, preserves, and mustard. Mix Well
Unroll crescent roll onto lightly floured surface. Separate crosswise into 2 squares
On an oven safe sheet, place brie on one square, leaving one-inch border around the brie
Scoop apricot mixture on top of brie
Place other square of dough over the brie and apricot mix
Pinch the edges together. Brush with egg
Bake 30-35 minutes or until golden brown and bubbly
Let sit 15 minutes before serving. Serve with crackers or French bread
