Herb and Cheese Biscuits

Ingredients

  • 2 1/2 Cups flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 6 Tbs butter, grated and cold I put mine in the freezer about 30 mins before baking
  • 1 Cup grated cheddar, packed
  • 1 Tbs finely chopped fresh chives
  • 1 Tbs finely chopped fresh thyme
  • 1 Cup milk Start by adding 1/2 cup and then slowly add more until mixture is firm but not wet. You may not need the entire 1 cup if you achieve this with less
  • 1-2 Tbs butter, melted for brushing

Instructions

  • Preheat oven 400º F; spray baking sheet with olive oil or line with parchment
  • In a medium bowl whisk together the flour, baking powder and salt
  • Grate in the cold butter
  • Pack the cheese into the measuring cup, and add to flour mixture; and herbs and stir completely
  • Add the milk, starting with 1/2 cup, and stir until it comes together, adding more milk as needed. You may not need the entire 1 cup
  • Lightly flour a large, clean surface and roll out dough onto this area. Begin bringing together the dough with your hands. I then cut my dough in half to make it easier to work with, but you could work with entire amount. Roll out the dough to 1 inch thick and cut with biscuit cutter. Place biscuits on prepared baking sheet, about 1 inch apart.
  • Lightly spread soft or melted butter over the top of each biscuit
  • Bake 18-20 minutes, or until lightly golden brown on top
  • You may add a bit more melted butter, if you’d like, or serve as they are
