Cabbage Rolls
A hearty, delicious comfort meal. Just be sure to provide plenty of prep time for this one because it is not a last minute meal!

- Large heavy roasting pan
Ingredients
- 3 lbs ground beef
- 3/4 cup uncooked rice
- 3/4 cup diced onions
- 1 1/2 tsp salt
- 1 tsp pepper
- 2 medium heads cabbage
- 27 oz can sauerkraut
- 28 oz can stewed tomatoes
Instructions
- Fill a large pot with water and bring to a boil. Core the heads of the cabbage and place in boiling water, one at a time. Leave in the hot water for a few minutes then remove. Peel off the softened leaves and place on a paper towel to drain. Place cabbage back in hot water and repeat this process until all of the leaves have been removed off both heads of cabbage.
- In a mixing bowl combine the ground beef, rice, salt, and pepper until well mixed and then shape into 2" meatballs. Wrap each meatball in a half leaf of cabbage and lay in a large heavy roasting pan. Once you've filled the bottom, pour on half of the can of sauerkraut and half of the can of tomatoes. Repeat the process with a second layer, finishing off the rest of the sauerkraut and tomatoes on top. Fill tomato sauce can and pour over the top of the rolls. Cover and bake at 350° for 3-4 hours. Serve warm with French bread. Enjoy!
