Preheat oven 400º F; spray baking sheet with olive oil or line with parchment
In a medium bowl whisk together the flour, baking powder and salt
Grate in the cold butter
Pack the cheese into the measuring cup, and add to flour mixture; and herbs and stir completely
Add the milk, starting with 1/2 cup, and stir until it comes together, adding more milk as needed. You may not need the entire 1 cup
Lightly flour a large, clean surface and roll out dough onto this area. Begin bringing together the dough with your hands. I then cut my dough in half to make it easier to work with, but you could work with entire amount. Roll out the dough to 1 inch thick and cut with biscuit cutter. Place biscuits on prepared baking sheet, about 1 inch apart.
Lightly spread soft or melted butter over the top of each biscuit
Bake 18-20 minutes, or until lightly golden brown on top
You may add a bit more melted butter, if you’d like, or serve as they are
