Cheesy Enchilada Casserole

Cheesy Enchilada Casserole

Ingredients

  • 8-10 large corn tortillas
  • 2-3 cups shredded cheddar cheese can use Monterey jack, or a combination as well
  • 28 oz enchilada sauce of your choice I use mild, but you can choose your own heat

Instructions

  • Preheat oven to 350°
  • Spread a small amount of sauce on the bottom of a 9 X 13 baking dish
  • Spread out approximately 4 of the corn tortillas on top of the sauce. You may need to break some of the tortillas in half to make sure they thoroughly cover the dish
  • Sprinkle 1 cup of cheese on top of tortillas
  • Add another layer of tortillas and spread a small amount of sauce on top. Add another cup of cheese on top of sauce
  • Add one final layer of tortillas and top with the remaining sauce. There will be a lot of sauce but that's okay because it will cook into the casserole. Top with remaining cheese making sure the casserole is thoroughly covered in cheese
  • Bake for 30-45 minutes, or until cheese is brown and sauce is bubbly
  • Remove from oven and let sit for 10 minutes for easier slicing
  • Serve warm with sour cream (optional)
  • Enjoy!
