Baked Brie with Roasted Garlic

Baked Brie Bread Bowl with Roasted Garlic

Ingredients

  • 2 Tbs garlic olive oil (regular olive oil is fine also)
  • 1 whole garlic bulb
  • 1 Tbs minced fresh rosemary
  • 1 round sourdough loaf
  • 1 8 oz round brie cheese

Instructions

  • Preheat oven to 425°
  • Remove outer skin from garlic and with a sharp knife cut off the top of the bulb. Brush with the olive oil and sprinkle with rosemary
  • Wrap the seasoned garlic in heavy duty foil, and bake for 30-35 minutes, or until softened. Remove from oven and allow to cool for 10-15 minutes
  • Reduce oven heat to 375°
  • Cut the top fourth of the round bread loaf. Carefully hollow out the loaf and place cheese round inside. Safe the bread you hollowed out
  • Squeeze softened garlic into a bowl and mash with a fork. Spread the garlic over the cheese, then replace the top
  • Brush the outside of the loaf with the remaining olive oil, wrap in foil, and bake 45-50 minutes, or until cheese is melted
  • Serve warm with hollowed out bread, sliced baguette, grapes, apples, and strawberries
  • Enjoy!
